Recipe from: Sheba Promod
Ingredients (Serves 2-3)
3 tbsp. vegetable oil
½ tsp. mustard seeds
1 tsp. cumin seeds
8-10 fresh curry leaves (if available)
4 green chillies (2 slit and 2 chopped – do adjust depending on preference)
2 medium onions, finely sliced
2.5” piece ginger, finely chopped (or 1 tsp. ginger paste)
4 cloves garlic, crushed (or 4 tsp. garlic paste)
160 ml Coconut milk mixed with 100 ml water
3 medium tomatoes, chopped
2 tsp. coriander powder
2 ½ tsp. garam masala
500g pork, cut into strips or diced
1 tsp. salt
1 tsp. ghee (optional)
Heat the oil in in a large non-stick pan and when hot, fry the mustard seeds, cumin seeds and curry leaves for about 8-10 seconds (but be careful not to burn them!).
Add the sliced onions, green chillies, ginger and garlic and sauté on a medium to low heat for 8-10 minutes, stirring every so often; they should be softened but not brown (do resist the temptation to eat the onions at this point!)
Stir in the coconut and water blend, tomatoes, garam masala, coriander powder and salt. Mix in the pork and bring to the boil. Reduce the heat and cook uncovered for approximately 10 minutes until the sauce has reduced by a half. This of course is dependent on your preference; you can increase this time if you want a thicker sauce.
Finally, add the ghee and mix until it has dissolved. Serve with rice or chapatis.
