A simple cookie recipe that makes soft yummy cookies that all the family will enjoy! Great fun for the kids to join in and make too
Makes 12 Large Cookies
250g plain flour
1/2 teaspoon baking powder
1/2 teaspoon salt
150g unsalted butter, melted
200g Demerara sugar
100g caster sugar
1 tablespoon vanilla extract
1 bag of mini chocolate eggs.
For these cookies I’ve used Tesco ‘Micro-Eggs’. They’re smaller than Cadbury’s mini eggs and in this instance I prefer them.
Preheat the oven to 180 C. Line a baking tray/sheet with baking parchment.
Mix together the flour, baking powder and salt in a large mixing bowl.
In a separate mixing bowl, cream together the melted butter, brown sugar and caster sugar until well blended. Beat in the eggs and vanilla extract until light and creamy.
Mix in the ingredients from the flour bowl using a wooden spoon.
You can now spoon the cookie mixture onto the baking parchment and bake but I prefer to roll it into a sausage onto some Clingfilm and refrigerate it for an hour or two.
When you remove the cookie ‘sausage’ from the fridge it’s firmed up a little and is easy to cut into slices which make nice round cookie shapes. Place the slices of cookie dough onto the baking tray lined with parchment and flatten them out a little. Add the chocolate eggs by pressing them into the mixture.
Make sure there is plenty space between each cookie as they do spread as they bake.
Bake for 10 to 12 minutes in the preheated oven, or until the edges are ever so slightly browned. They will still feel a little spongy and soft to the touch when you take them out of the oven but they will firm up a little as they cool.
