Chocolate Brownies with Mini Eggs

We love Mini Eggs and every Easter we try and find different recipes that we can include them in. Last year we made some Easter Cookies which contained Mini Eggs and then a few weeks ago we made some Fudge with Mini Eggs which was delicious!

But now we’ve gone a step further and taken chocolate to the max! This is a chocoholics dream, Chocolate Brownies with Mini Eggs!

Chocolate Brownie with Mini Eggs

Ingredients

  • 250g unsalted butter
  • 100g dark chocolate
  • 100g milk chocolate
  • 70g plain flour
  • 4 large eggs
  • 300g caster sugar
  • 50g Nesquik powder or other powdered hot chocolate drink powder
  • 1 teaspoon of baking powder
  • 1 bag of Cadbury’s Mini Eggs

 

You will also need a cake tray tray or shallow casserole dish pre-greased or lined with baking parchment or tin foil ready to pour the mixture into.

 

Method

Pre-heat the oven to 180C (160C for a fan oven).

Add the broken pieces of dark and milk chocolate along with the butter to a heat proof bowl or Pyrex dish.

In a saucepan, bring some water to the boil and then reduce to a simmer. Hold the bowl/jug of chocolate and butter just over the simmering water and stir the chocolate and the butter until melted.

Brownie Mixture

In a separate mixing bowl, mix together the flour, caster sugar, Nesquik (or cocoa/drinking chocolate) powder and baking powder.

To this bowl add the melted chocolate and butter, mix it altogether and then add the eggs. Stir the mixture again until all the ingredient s are well mixed.

 

Pour the mixture into a pre-lined/greased baking tray. And add the Mini Eggs.

Easter Brownies

 

Place the tray of brownie mix in the oven and bake for 25 minutes, if after 25 minutes the brownie still looks a little wobbly in the middle return to the oven for a further 5 minutes. You don’t want to over cook it so it stays nice and moist but it can’t be raw in the middle.

Once it no longer wobbles (!) but still soft when you press it, remove from the oven and set aside to cool completely. It will continue to firm up so don’t cut it until completely cool as it might start to break into bits.

Mini Egg Chocolate Brownie

Serve cold, or reheat in the oven or microwave and serve with ice cream!
